A Cake in a Mug

Hello folks!!


Today why not do something new and whimsical...
I know that you are all at home due to the lock down and just wishing to have a good piece of cake.So, why not try out one of my favorite recipes (which will soon become your favorite too) -MUG CAKES 

What is a mug cake?

YES.. you are right.Just as the name goes, a mug cake is simply a cake in a mug. How much fun is that! It is a very easy to bake cake and it proves true that anyone can make it.
The best part is that they get baked really fast, much faster than any normal cake would, can fill your stomach in one serving and you would definitely have all of those ingredients at home.

Most mug cakes can be made using just 5-6 ingredients and there are others also which require only a surprising 2-3 ingredients. You can always put on your favorite toppings and decorations to have a much more enjoyable experience baking.

You can also be sure that this cake will always be there to satiate your  cravings and be your  best partner in crime (duh..don't you show that innocent face when mommy asks "who stole that extra piece of cake?")..let us not forget that good things come in small packages.


A few things to keep in mind:

You cannot always find the best substitute to the ingredients in a recipe but cheer up, you can definitely find close substitutes.In this recipe, you can use

  • 1 ½ tbsp of vegetable oil instead of 1 tbsp butter.
  • If you don't want to use egg, you can always put in ½ pureed bananas or 1tbsp yogurt (make sure these ingredients are at room temperature and not cold and directly taken out from your refrigerator). 
  • If your refined flour is out of stock, don't hesitate to use wheat flour instead. It is definitely a healthier option, but it won't be as fluffy as a cake made using refined flour.
Additions:
You can add in almost anything you want to your mug cake
  • To bring in a slight coffee taste, add in ½ tbsp coffee powder.
  • Suggested toppings are fruits like banana, strawberry or use chocolate chips.
  • A simple easy-to-make frosting can be made by using 1 cup castor sugar and 2 tbsp milk or whipped cream and whisk it up till it becomes smooth enough to decorate.
Remember: It's the castor sugar that makes your frosting the right consistency you want. If you use milk, you will get a lighter consistence when compared to one made with whipped cream.


RECIPE                                                                                                                              Serves: 1

Refined flour (maida)- 2 ½ tbsp

Granulated sugar-1 tbsp

Brown sugar (Jaggery powder also works the same way)- ½  tbsp.

Half or 1 egg

Butter- 1 tbsp

Vanilla essence-¼ tsp

¼ tsp cinnamon powder

1/8 tsp baking powder

Salt to taste


INSTRUCTIONS

1. Coat the inner side of your mug with some butter or oil to prevent the cake from sticking to it.

2. Drop the butter into the mug and soften it by bringing it to room temperature.This can be done by putting it in the microwave for 10 seconds but make sure it does not get melted. Add the granulated sugar to it and mix till it becomes light and fluffy.Add the egg(or pureed banana or yogurt) and vanilla essence as well and stir until combined.

3.Now, put flour,cinnamon powder,salt and baking powder in a separate mug and mix 

4. Add the dry mixture in step 3 to your mug with the egg, butter and sugar mixture and mix until there are no lumps. It must be somewhere in between a thick and flowing consistency. Make sure you don't over mix or else the cake won't rise.

5.Sprinkle some brown sugar on the top and put your mug into the microwave for only 1 minute to cook.

NOTE: don't put anything metallic into the microwave. This means even your mug should not have any metallic coatings on it. Use a mug that is microwave safe.

6. To check if your cake is done, use a tooth pick. If it comes out clean, your cake is done. If not, put it in the microwave for another 15 seconds.

You have now baked a beautiful Cake in a Mug. Enjoy it with a topping you like and take yourself to another world!!!
