Pumpkin Soup and some more...

Pumpkins NEVER allow you to get unhappy. You can use them for carving Jack-o-lanterns, make the classic pumpkin pie, cheese cake, pumpkin pasta and of course heart warming pumpkin soup. There's a lot of things you can prepare from a humble vegetable.

Have you ever felt like devouring something nice and warm when it is very cold outside, or lift your spirits on a gloomy day? A soup or broth always brings magic.The origin of soup dates back to the origin of human civilization.There are four main types of soups - broth, purees, cream soups and thickened soups. Here is a beautiful puree soup recipe that keeps your stomach, your day and your taste buds, all three happy at the same time. Make sure that you have it with hot buttered crusty bread or golden fried croutons. If you like it spicy,you can always add a pinch of cinnamon.

PS:If you are a bird-lover like Jack Trent in the Five Find-Outers and you have a chatter-box parrot 'Kiki' at home, treat it to some pumpkin seeds to shut it up at times.

RECIPE                                                                                                                            Serves:4 people

INGREDIENTS

¼ medium pumpkin/1 medium sized butternut

½ medium onion

Butter-1tbsp

Water – 2 cups

SEASONING

Corn flour – 1tbsp

Milk- 1 tbsp

Grated Cheese-1 tbsp

Cream – 1tbsp

INSTRUCTIONS

1.Peel,remove seeds and chop the pumpkin roughly. Peel and slice the onions.

2.Melt the butter in a pan and fry the onions and pumpkins in it for about 5mins.

3.Add the water, and seasonings into the saucepan and bring it to a boil. Cover and simmer for about an hr or until the vegetables have become soft, or use a pressure cooker instead to hasten the cooking time.

4.Pour the soup through a sieve to produce a puree .

5.Mix the corn flour and milk together and stir it into the soup and bring it again to a boil while continuously stirring until it thickens.

6.Taste the seasoning and stir in the grated cheese and cream

Serve hot with a generous amount of croutons and grated cheese…..
