Pumpkin Soup and some more...
RECIPE Serves:4 people
INGREDIENTS
¼ medium pumpkin/1 medium sized butternut
½ medium onion
Butter-1tbsp
Water – 2 cups
SEASONING
Corn flour – 1tbsp
Milk- 1 tbsp
Grated Cheese-1 tbsp
Cream – 1tbsp
INSTRUCTIONS
1.Peel,remove seeds and chop the
pumpkin roughly. Peel and slice the onions.
2.Melt the butter in a pan and fry
the onions and pumpkins in it for about 5mins.
3.Add the water, and seasonings
into the saucepan and bring it to a boil.
Cover and simmer for about an hr or until the vegetables have become soft, or use a pressure cooker instead to hasten the cooking time.
4.Pour the soup through a sieve to
produce a puree .
5.Mix the corn flour and milk
together and stir it into the soup and bring it again to a boil while
continuously stirring until it thickens.
6.Taste the seasoning and stir in
the grated cheese and cream
Serve hot
with a generous amount of croutons and grated cheese…..
