Mayonnaise - A Jar of Memories

I am so excited to share this recipe with you today because it makes me remember my first friend from childhood, Tamara Lopang, who is now a well known artist and lives in the opposite side of the world. She always used to eat her rice with mayo because she couldn't eat spicy food. She was the person who introduced me to lip smacking mayo. To say the truth, trying out this recipe for the first time was literally like a science experiment for me, but unlike a conventional science experiment, we get to eat our experiment ha ha ha …

This is a very simple method to make mayonnaise and you can prepare it in almost no time. So, the next time you want to have a sandwich or simply treat yourself to it but don’t have any more left, you will always have this recipe to fall back on. I feel this is a very special recipe because it has its own unique nuttiness and fragrance that I haven’t found in any other mayo that we buy from stores. Earlier this year, I made some sandwiches with mayo spread and took it to my friends back in college and I was wonder struck to see the results - within a few minutes, my lunch box was empty. Literally clean with no leftovers, believe it or not, they were still wishing to have more of that magic white sauce…I recommend you to try out this recipe to make someone happy.

Mayo is a commonly used cold sauce all around the world and is very popular in classic French cuisine to make the sauce rémoulade. Just like I say, there is some kind of magic in cooking; this recipe also has something amusing about it that most of us never noticed before. Mayonnaise is actually an emulsion that is a mixture of two liquids that normally can’t be combined – lemon juice and oil. Here, the emulsification is done by the addition of egg. That’s why you must add the oil little by little and not all at once to have the best mayo.

RECIPE                                                                                                                         Yield – 1 cup

Egg white - 2

Vegetable Oil – ¾ cup

Garlic – 2 cloves

Lemon – ½

Salt – a pinch

Sugar – a pinch


SEASONINGS (½ tsp)

1.Chili powder

2.Garlic powder

3.Cumin powder

4.Pepper


INSTRUCTIONS

1.In a food processor, add the egg, lemon, salt, sugar and garlic and set the processor on pulse.

2.With the motor sill running, add the oil drop by drop.

3.Taste the mayo and add some more salt or lemon to taste.

4.Refrigerate and stir before spreading.

NOTE : Add the oil little by little so that the ingredients bind and hold together while rapidly whisking the mixture. A seasoning of your preference can be added in after all the oil has been used up.


There are many types and variations of mayonnaise. Adding any of your preferred seasonings to this recipe will help you create your own special mayo. Have fun fellas....
