Quesadilla - Obra Maestra

As I mentioned in my previous cooked up story, I am sharing the next "delicioso receta" we came across during the preparation for our Home Science practicals in 10th grade. Here I am listening to 'Un Poco Loco' from the movie COCO, sipping some fresh apple juice and munching hot quesadillas, I just remembered the happy smiles on the judges’ faces when they took the first bite from this dish. Their smiles just confirmed how marvellously the dish was prepared.The right amount of passion, skill and creativity completed  the masterpiece.

The special dish you must try out today is Quesadilla, pronounced as /ˌkeɪsəˈdiːjə/  (kay-se-diyeh).  One dish that is just too good to ignore - its golden crispy tortilla, the molten cheese and juicy meat seasoned with pretty flakes of magical dust. None can resist the temptation!!!

 


The beautiful saga  of Quesadilla

A quesadilla is a Mexican dish which is made from a tortilla filled with cheese, meat, spices, beans and cooked on a pan. When the Spaniards brought dairy products to Mexico in the 1500s (remember the Spanish conquest), the Mexicans combined the cheese (queso) with one of their favourite breads - tortilla and created the now famous QUESADILLA.

In very simple terms, a quesadilla is a tortilla filled with Mexican grilled cheese and any filling that you would like to add to it.

If you are craving for a pizza, but want a healthier option, then try making a quesadilla – add any vegetable,  beans and chicken for protein and use whole grain tortillas for the base for extra nutritional benefit.

Here, I am going to use chicken for the meat filling, but you can use any filling of your choice…

RECIPE                                                                                                                                  Serves: 6

INGREDIENTS

1.Tortilla – 6

2.Shredded Cheese – 2 cups

3.Corn – 1 cup

4. Chicken filling:

(i) Chicken (boneless) – 500g

(ii) Red capsicum(diced ) – 1 cup

(iii)Onion (small) -  diced

(iv) Oil (preferably olive oil) – 2 ½ tbsp

(v) garlic – 2 minced cloves


FOR THE CHICKEN FILLING

1.Drizzle the chicken with oil and spices. 

2.Heat the pan with some olive oil and add onion and garlic and cook for 2 mins on high flame.

2.Add capsicum and cook for a minute.Cool the content in a bowl.

3.Cook the chicken on both sides till golden brown with some more oil in the same pan.

4.Once the chicken has turned golden brown, place on a cutting board and once it becomes cool, dice it and combine with capsicum mixture.


INSTRUCTIONS

1.Place the tortilla on a flat surface and put cheese, chicken  filling and veggies of your choice and again put some cheese on top. Fold carefully in half.

2.Preheat the pan (grease with olive oil if you don’t have a non-stick pan)

3.Place the quesadilla carefully onto the pan and press slightly on the top. Cover the pan with a lid and cook for 3 minutes on medium flame.

4.Carefully flip to cook the other side for another 3 minutes without putting on the lid.

5.Transfer it onto a plate and cut in half. Serve warm and sip some punch.
