Mmm....Dorayaki Cakes

Yesterday I was arranging my bookshelf and I found one of my favourite nursery stories- Mr Wolf’s Pancakes lying on the bottom rack with all the other books that were meant to be given away. As I turned the pages filled with drawings, colours and huge letters, I could feel myself once more sitting on my little chair and asking my mother to read it to me.

The story is about a wolf who is very hungry and wants to eat some pancakes, but because wolves can’t read from a recipe book, or make a shopping list, he asks for help from his neighbours – the ginger bread man and the three little pigs, but they were so rude to him and finally, he had to manage everything all on his own!

This story made me imagine I was Mr Wolf whenever we had pancakes for breakfast or at tea time. But now, the story repeats with a different hero. My sister’s favourite cartoon is Doraemon, a cat robot (not a raccoon) who is crazy for his pancake, the Dorayaki cake and falls for any trap involving them. Besides Doraemon, we also love nibbling on this chocolaty snack.




Traditionally, the dora (or dorayaki) cake is made using red mung bean, called adzuki beans in Japan. But, today, we will make them using chocolate. Note: You can try out the same recipe with chocolate and peanut butter or with sweetened mung dal.

 

RECIPE                                                                                                                                      Serves :3

INGREDIENTS

1. Eggs – 2

2. Sugar – 1 cup

3. All-purpose flour- 1 cup

4. Water – ½ cup

5. Honey – 1 tbsp

6. Vanilla essence- 1 tsp

7. Baking soda – ½ tsp

8. Chocolate spread – as much as you want!

INSTRUCTIONS

1. In a bowl, add eggs and sugar and beat until fluffy. Then, add vanilla essence and mix it.

2. Now, add flour and honey and mix the batter well.

3. In another bowl, mix water and baking soda and pour this into the flour batter and mix well.

TO MAKE THE CAKE

1. Heat a flat pan and drizzle some oil.

2. Once the pan is heated, pour a small ladle of the batter onto it.

3. Wait till small bubbles appear on the side of the pancake and flip over to cook both the sides.

4. Once cooled, spread the chocolate spread and close with another pancake. Your dora cake is ready now. Enjoy with some punch watching your favourite TV show…
